Ingredients:
- 3oz bag of Traditional Prime Rib Jerky, chopped
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 4 garlic cloves, minced
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper
- 1 can (28 oz) diced tomatoes
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 2 cups beef broth
- Salt and pepper, to taste
- Shredded cheddar cheese and chopped fresh cilantro, for garnish
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the onion, green and red bell peppers, and garlic.
Cook until the vegetables are tender, about 5 minutes. - Add the chili powder, cumin, smoked paprika, and cayenne pepper.
Cook for 1 minute, stirring constantly. - Add the diced tomatoes, kidney beans, black beans, and beef broth.
Bring the mixture to a boil and then reduce heat to low.
Simmer for 20-30 minutes, stirring occasionally. - Add the chopped beef jerky and stir to combine.
Simmer for an additional 10-15 minutes. - Season with salt and pepper to taste.
- Serve the chili hot, garnished with shredded cheddar cheese and chopped fresh cilantro.
