Beef Jerky Curry
This Beef Jerky take on a classic curry will spice up your next meal!
Ingredients:

1 SharePak (8oz) Sweet and Spicy Jerky, shredded

1 ½ cups uncooked rice

2 tsp curry powder
-
¾ tsp salt
-
¼ tsp pepper
-
½ cup chopped onion
-
1 Tbsp oil
-
1 can of coconut milk
-
2 Tbsp tomato paste
-
3 cups fresh baby spinach
-
1 cup chopped tomato
-
1 jalapeño, minced (optional)
Directions:

Cook rice according to the directions on the package. Leave the lid on the pan to keep it warm.

In a large saucepan, sauté onion in oil until soft.

Add coconut milk and tomato paste. Bring to a boil. Add shredded jerky and reduce heat. Let simmer uncovered for 5 minutes, or until thickened.

Add spinach and tomato. Cook for 2-3 minutes longer, or until spinach is cooked.

Serve over rice.
